Earlier this summer, Ben comes home from grocery shopping saying, “Guess the deal I got!” This statement usually makes me cringe, because who knows what looks appealing just because it’s a “deal”. Turns out, 10 pounds of pears for $10 was a great deal. Especially when it turns into guilt free brownies!
As with the majority of my recipes, I begin with an idea and find a recipe online to start me out. Then I tweak, which sometimes turns out and sometimes not. But it’s always an adventure!
This recipe begins with puréed pear and ends with chocolate-y goodness the consistency of flourless cake. Delish!
Brownies- unprocessed, gluten free, 6 ingredients
1 1/2 cup of puréed pears
1/2 cup coconut oil
1/3 cup honey
1 egg
1 cup dark cocoa
1/2 tsp. cinnamon
Optional:
1 tsp. vanilla (I have a weak spot for vanilla in pretty much anything)
1/2 cup chocolate chips (When I add chips, I use Ghirardelli semi sweet)
Instructions:
Peel and seed 5-6 pears. Boil in water for 5 minutes, or until you can easily pierce them with a fork.
Puree in blender. Add oil, honey, and cocoa. Add egg. Then mix in cocoa, cinnamon and optional ingredients.
Bake at 350 degrees for 40 minutes.
This might seem like a long process for “just a brownie”. Here are some tips to speed up your cooking:
Take one morning a month to wash, peel, seed, boil, and puree the fruits and vegetables you use most often. I can say, my morning smoothies and mystery casseroles are a WHOLE lot healthier when I can add a cup of carrot, kale, or apples in a moment’s notice.
While the brownies are baking, put your significant other in charge of taking the goods out of the oven, and then go work out! Who has the time to sit and watch a stove for 40 minutes? Not this girl. And taking the food out of the oven is a task I can fully entrust to my beloved. 😉
